Holiday Turkey and Long Grain & Wild Rice Salad

Ingredients

Creamy Cranberry Vinaigrette:

  • 1 c cranberries, fresh, rinsed and dried
  • ½ c apple cider vinegar
  • 6 T honey
  • 2 t Dijon mustard
  • ½ c orange juice
  • ½ t Kosher salt
  • 1 pinch ground black pepper
  • 2 c extra virgin olive oil

Salad Mixture:

  • 7½ c BEN’S ORIGINAL™ Long Grain & Wild Rice, prepared according to box
  • 1½ c kale, washed, dried, rough chop
  • 36 oz turkey breast, prepared, ½” dice
  • 3 c granny smith apples, ½” dice
  • ¾ c carrots, finely shredded
  • ¾ c pecans, toasted, rough chop

Makes: 12 Servings

Direction

Creamy Cranberry Vinaigrette:

  1. Combine all in a blender top except for oil. Blend on high.
  2. Drizzle oil.
  3. Reserve.

Plating:

  1. In a large mixing bowl, mix BEN’S ORIGINAL™ Long Grain & Wild Rice, kale, turkey, apples and carrots.
  2. Plating 1½ c of salad mixture and top with 1 T of pecans for one serving.
  3. Serve with 1.5 fl oz of creamy cranberry vinaigrette.
