  • 1 pt BEN’S ORIGINAL® International Grains® Arborio Rice 
  • 3 oz-wt Butter
  • ¾ cup Light Brown Sugar
  • 6 ea Bananas, peeled and sliced, plus extra for garnish
  • 2 cup Orange Juice
  • 3 qt Coconut Milk
  • 2 cup Heavy Cream
  • 1 ½ tsp Ground Cinnamon
  • 1 ½ cup Walnuts Chopped (toasted)
  • 1 cup Caramel Sauce

Bananas Foster Risotto Pudding

Makes: 24 Servings


  1. Add butter, brown sugar and bananas to a large sauce pot. Over medium heat, allow for the bananas to cook in the butter and sugar for 1 minute.
  2. Add orange juice and reduce by 75%.
  3. Add coconut milk, heavy cream, cinnamon and bring to a boil.
  4. Add Risotto. Bring to a boil then reduce heat to a simmer, stirring occasionally.
  5. The mixture will be thick and viscous. Add walnuts and a ¼ of the caramel sauce. Take the pot off the heat and stir. Allow to sit for 5 minutes.
  6. While hot, divide pudding evenly among 5-6 oz jars. Divide remaining caramel sauce evenly on top, and add a few more slices of banana if desired for garnish. Cover with plastic wrap and allow to set overnight.
