Bananas Foster Risotto Pudding
Ingredients
- 1 pt BEN’S ORIGINAL® International Grains® Arborio Rice
- 3 oz-wt Butter
- ¾ cup Light Brown Sugar
- 6 ea Bananas, peeled and sliced, plus extra for garnish
- 2 cup Orange Juice
- 3 qt Coconut Milk
- 2 cup Heavy Cream
- 1 ½ tsp Ground Cinnamon
- 1 ½ cup Walnuts Chopped (toasted)
- 1 cup Caramel Sauce
Bananas Foster Risotto Pudding
Makes: 24 Servings
Direction
- Add butter, brown sugar and bananas to a large sauce pot. Over medium heat, allow for the bananas to cook in the butter and sugar for 1 minute.
- Add orange juice and reduce by 75%.
- Add coconut milk, heavy cream, cinnamon and bring to a boil.
- Add Risotto. Bring to a boil then reduce heat to a simmer, stirring occasionally.
- The mixture will be thick and viscous. Add walnuts and a ¼ of the caramel sauce. Take the pot off the heat and stir. Allow to sit for 5 minutes.
- While hot, divide pudding evenly among 5-6 oz jars. Divide remaining caramel sauce evenly on top, and add a few more slices of banana if desired for garnish. Cover with plastic wrap and allow to set overnight.
