California Whole Grain Salad
Ingredients
- 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
- 4 Tbsp Red Quinoa, prepared
- 2 qt Baby Spinach
- 1/2 cup Beefsteak Tomato, diced
- 2 ea Avocado, sliced
- 1/4 cup Feta Cheese, crumbled
For Vinaigrette:
- 3/4 cup Meyer Lemon juice
- 1/4 cup White Wine Vinegar
- 1/4 cup Light Olive Oil
- 1/8 tsp Black Pepper, ground
- 1/8 tsp Salt
California Whole Grain Salad
Makes: 4 servings
Direction
- In a small bowl, whisk together vinaigrette ingredients. Set aside
- Mix brown rice and quinoa together. Equally divide spinach among 4 serving bowls and top with equally divided brown rice and quinoa, tomatoes, avocado and feta cheese.
- Drizzle lemon vinaigrette over top and serve.
