Chili-Lime Quinoa, Chicken & Arugula Salad
Ingredients
FOR ASSEMBLY:
- 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
- ¼ cup Red Quinoa, prepared
- 8 cups Arugula
- 1 cup Carrots, shredded
- 1 cup Dried Cherries
- 1 pound Cooked Chicken Breast, chopped into 1” pieces
Chili-Lime Dressing:
- 3/4 cup Lime Juice
- 1/4 cup Soy Sauce
- 2 Tablespoons Light Olive Oil
- 1/2 Tablespoons Crushed Red Pepper

Makes: 4 Servings
Direction
Chili-Lime Dressing:
- Whisk together all ingredients and reserve.
Assembly:
- In a large mixing bowl, toss together brown rice and quinoa, arugula, shredded carrots, dried cherries and chili-lime dressing. Add chicken chunks and softly toss into salad. Divide equally among 4 serving vessels.
