Chili Lime Quinoa Chicken Arugula Salad

Chili-Lime Quinoa, Chicken & Arugula Salad

Makes: 4 Servings

INGREDIENTS

  • 2 cups UNCLE BEN’S® Whole Grain Brown Rice & Quinoa, prepared
  • 16 ounces chicken chunks
  • 8 cups arugula
  • 1 cup shredded carrots
  • 1 cup dried cherries
  • 1 cup chili-lime dressing (see directions)

Chili-Lime Dressing

  • ¾ cup lime juice
  • ¼ cup soy sauce
  • 2 tablespoons light olive oil
  • ½ tablespoon crushed red pepper

DIRECTION

Chili-Lime Dressing

  1. Whisk together all ingredients and refrigerate until cold.

Assembly

  1. Cook chicken and set aside.
  2. In a large mixing bowl, toss together UNCLE BEN’S® Whole
    Grain Brown Rice & Quinoa, arugula, shredded carrots, dried
    cherries and chili-lime dressing. Add chicken chunks and
    softly toss into salad.
