Huevos Rancheros Breakfast Bowl

Ingredients

  • 3 ⅔ cup Ben's Original Whole Grain Brown Rice, prepared
  • ⅓ cup Red Quinoa, prepared
  • 4 each Egg, fried
  • 2 cups cooked Chorizo
  • 1 cup Canned Black Beans, drained
  • ¼ cup Canned Diced Green Chilies
  • ½ cup Onion, 1/4" diced
  • 1 cup Beefsteak Tomato, chopped
  • ¾ cup Salsa Verde
  • ½ cup Cotija Cheese, grated
  • 2 Tbsp Cilantro, chopped

Huevos Rancheros Breakfast Bowl

Makes: 4 serving

Direction

1. In a mixing bowl, mix brown rice and quinoa together. Divide equally among 4 serving bowls.

2. Top with a fried egg, chorizo crumbles, black beans, green chilies, diced onion, diced tomatoes, salsa verde and cotija cheese.

3. Finish with cilantro.
