Jalapeño Jack Quinoa Slider

Ingredients

  • ¾ heaping cup Ben's Original Whole Grain Brown Rice, prepared
  • 1 heaping Tbsp Red Quinoa, prepared
  • 1/2 cup Panko Breadcrumbs
  • 1 each Garlic Clove, minced
  • 2 Eggs
  • 2 Tablespoons Hummus
  • 1/2 cup Onion, finely chopped
  • 1/4 cup Parmesan, grated
  • 1/2 teaspoon Salt
  • 1 Tablespoon Unsalted Butter
  • 4 slices Pepper Jack Cheese
  • 4 slices Monterey Jack Cheese
  • 1/4 cup Crispy Shallots (or Crispy Onions)
  • 1/4 cup BBQ Sauce
  • 4 each Brioche Slider Buns, toasted

Jalapeño Jack Quinoa Slider

Makes: 4 servings

Direction

  1. In a mixing bowl, combine brown rice, quinoa, panko breadcrumbs, garlic, eggs, hummus, onion, Parmesan and salt. Divide mixture and form into four equal patties.
  2. Add butter to skillet and place over medium heat. Add the burgers and cook on each side for approximately 6 minutes or until done (internal temperature is at least 165°F). In the last minute, add both Jack cheeses on top of each patty to melt.
  3. Place each burger on toasted brioche buns, top with fried shallots (or onions) and BBQ sauce. Serve immediately.
