Mexican Quinoa and Chicken Bowl

INGREDIENTS

  • 4 cups UNCLE BEN’S® Whole Grain Brown Rice & Quinoa, prepared
  • 16 ounces grilled chicken
  • 1 cup cheddar cheese
  • 1 cup pepper Jack cheese
  • 4 tablespoons chopped jalapeños
  • 8 tablespoons pico de gallo
  • 2 tablespoons sour cream
  • 4 tablespoons crispy tortilla strips

DIRECTION

  1. Grill chicken and cut into strips. Set aside.
  2. Mix together cooked UNCLE BEN’S® Whole Grain Brown Rice
    & Quinoa, both cheeses and chopped jalapeños.
  3. Once cheese is melted into mixture, place serving into a
    bowl. Place grilled chicken strips on top and garnish with
    pico de gallo, sour cream and crispy tortilla strips.
