Pacific Northwest Flatbread
Ingredients
- ⅓ heaping cup Ben's Original Whole Grain Brown Rice, prepared
- 2 1/2 heaping tsp Red Quinoa, prepared
- 3 Tablespoons Unsalted Butter
- 1 Garlic Clove, minced
- 1 tablespoon Parsley, chopped
- 4 ounces Smoked Salmon, sliced
- 3/4 cup Caesar Dressing
- 1 cup Baby Arugula
- 1/4 cup Parmesan Cheese, shaved
- 1 ea Flatbread, made by baking pizza crust into a 12" x 9" rectangular pan
- 1 Tablespoon Balsamic Glaze
Pacific Northwest Flatbread
Makes: 9 pieces
Direction
- Preheat oven to 350°F.
- In a saucepan over medium heat, add butter, garlic and parsley until fragrant. Brush on flatbread and bake for approximately 4 minutes.
- Mix brown rice and quinoa. Top flatbread with Caesar dressing, smoked salmon, brown rice and quinoa. Bake for an additional 5 - 8 minutes. Remove.
- Portion into 4" x 3" pieces and immediately top with arugula, shaved Parmesan cheese and then drizzle balsamic glaze over top. Serve immediately.
