Peanut Butter Cookie Sandwich made with SNICKERS® Bars

Makes: 12 cookie sandwiches

INGREDIENTS

Peanut Butter Cookies:
  • 6 T SNICKERS® Bars, ¼” chopped
  • 17 oz peanut butter cookie dough, prepared
Creme Filling:
  • 3 T unsalted butter, softened
  • ¾ c powdered sugar
  • 3/4 T heavy cream
  • ¼ t vanilla extract
  • 1 pinch salt

DIRECTION

Peanut Butter Cookies:
  1. Preheat oven to 350°F and prepare sheet trays with parchment paper.
  2. Portion peanut butter cookie dough using a #40 scoop or 2 tablespoons into 24 balls.
  3. On the prepared sheet trays, press each dough ball into a flattened round shape.
  4. Using a fork, press a cross hatch pattern into the top of each cookie dough.
  5. Top each portion with ¼ T of chopped SNICKERS® Bars.
  6. Bake for 10-12 minutes or until done. Remove from oven and let cool completely.
Creme Filling:
  1. In a separate bowl, whip softened butter until fluffy and smooth.
  2. Add remaining ingredients and mix until fully combined. Set aside.
Assembled Cookie Sandwiches:
  1. On the bottom of one cookie, pipe approximately 2½ t of creme filling using a star tip.
    Optional: Roll cookies in additional chopped SNICKERS® Bars.
  2. Top with another cookie forming a sandwich.
  3. Individually wrap and sell.
