Power Breakfast Wrap
Ingredients
- 2 heaping cup Ben's Original Whole Grain Brown Rice, prepared
- 4 Tbsp Red Quinoa, prepared
- ½ pound Bacon
- 8 ea Eggs
- ¾ cups Cheddar Cheese, shredded
- ½ cup Baby Spinach
- 4 ea 10" Whole Grain Tortillas, steamed
Power Breakfast Wrap
Makes: 4 servings
Direction
- Add bacon to cold skillet and place on stovetop over medium heat. Cook until desired doneness, remove bacon, leaving the fat. Chop the cooked bacon and set aside.
- Add eggs to remaining fat in skillet and scramble, reducing heat after one minute. When eggs are almost finished cooking, add ½ cup of the shredded cheddar cheese and combine until melted. Remove from heat, cover and set aside.
Assembly:
- Mix brown rice and quinoa together.
- Divide all items into 4 equal portions and build per tortilla: layer the spinach, cheesy scrambled eggs, bacon, brown rice and quinoa and remaining cheese.
- Roll into a burrito and serve.
