Quinoa and Ancient Grains Mediterranean Wrap

INGREDIENTS
2 cups UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa and Ancient Grains Medley, prepared
8 kale leaves
¼ cup olive tapenade
¼ cup feta cheese
4 each small flatbreads
Lemon Chicken
8 ounces chicken breast, cut into strips
2 tablespoons light olive oil
2 large garlic cloves, minced
1½ teaspoons lemon pepper seasoning
Garlic Yogurt Dressing
½ cup plain nonfat Greek yogurt
1½ tablespoons fresh lemon juice
1 tablespoon light olive oil
½ teaspoon fresh garlic, minced
1 teaspoon parsley, chopped

DIRECTION
In a small bowl, whisk together dressing ingredients. Set aside.
In a mixing bowl, add chicken strips, garlic and lemon pepper seasoning, and toss until combined. Set aside.
Heat oil in a skillet over medium high heat. Add marinated chicken strips and cook on each side for approximately 3 minutes. Set aside.
On each flatbread, spread olive tapenade.
Layer kale, UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley, Lemon Chicken strips and feta cheese. Top with Garlic Yogurt Dressing, wrap and serve.
