Quinoa and Ancient Grains Mediterranean Wrap

Makes: 4 Servings


  • 2 cups UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa and Ancient Grains Medley, prepared
  • 8 kale leaves
  • ¼ cup olive tapenade
  • ¼ cup feta cheese
  • 4 each small flatbreads

Lemon Chicken

  • 8 ounces chicken breast, cut into strips
  • 2 tablespoons light olive oil
  • 2 large garlic cloves, minced
  • 1½ teaspoons lemon pepper seasoning

Garlic Yogurt Dressing

  • ½ cup plain nonfat Greek yogurt
  • 1½ tablespoons fresh lemon juice
  • 1 tablespoon light olive oil
  • ½ teaspoon fresh garlic, minced
  • 1 teaspoon parsley, chopped


  1. In a small bowl, whisk together dressing ingredients. Set aside.
  2. In a mixing bowl, add chicken strips, garlic and lemon pepper seasoning, and toss until combined. Set aside.
  3. Heat oil in a skillet over medium high heat. Add marinated chicken strips and cook on each side for approximately 3 minutes. Set aside.
  4. On each flatbread, spread olive tapenade.
  5. Layer kale, UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley, Lemon Chicken strips and feta cheese. Top with Garlic Yogurt Dressing, wrap and serve.
