Mediterranean Wrap
Ingredients
For Garlic Yogurt Dressing:
- 1/2 cup Plain Nonfat Greek Yogurt,
- 5 1/2 Tablespoons Lemon Juice
- 1 Tablespoon Light Olive Oil
- 1/2 teaspoon Garlic, minced
- 1 teaspoon Parsley, chopped
For Chicken:
- 10 ounces Chicken Breast, cut into strips
- 2 Tablespoons Light Olive Oil
- 2 ea Garlic, minced
- 2 ½ Tablespoons Lemon Pepper Seasoning
For Assembly:
- 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
- ¼ cup Red Quinoa, prepared
- 1 cup Kale Green, chopped
- 1/4 cup Olive Tapenade
- 1/4 cup Feta Cheese, crumbled
- 4 small Flatbreads

Makes: 4 servings
Direction
For Garlic Yogurt Dressing:
- In a small bowl, whisk together ingredients. Set aside.
For Chicken:
- In a mixing bowl, add chicken strips, garlic and lemon pepper seasoning, and toss until combined. Set aside.
- Heat oil in a skillet over medium high heat. Add marinated chicken strips and cook on each side for approximately 3 minutes. Set aside.
To Assemble:
- Mix brown rice and quinoa.
- On each flatbread, spread olive tapenade.
- Divide and layer among 4 equal portions: kale, brown rice and quinoa, prepared chicken and feta cheese.
- Top each with equally divided Garlic Yogurt Dressing, wrap and serve.
