Sour Cherry Cheesecakes Made with Chopped TWIX® Cookie Bars Crust

  • 24 each TWIX® Cookie Bars
  • 1 1/2 cups cream cheese
  • 1 1/2 cups crème fraiche
  • 1 1/6 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 each eggs
  • 2 cups sour cherries, dried
  • 1 tablespoon balsamic vinegar


  1. Preheat an oven to 250ºF.
  2. In a blender or Robot Coupe®, blend TWIX® Cookie Bars to a small grain (think panko breadcrumbs). Press into 12 small ramekins that have been lined with butter or nonstick spray.
  3. In a stand mixer, combine cream cheese, crème fraîche, ½ cup sugar and vanilla; mix on medium-high until creamy.
  4. On medium speed, mix in eggs until smooth.
  5. Pour mixture over crusts; place ramekins in a water bath and bake 35 to 45 minutes.
  6. While the cheesecakes are baking, in a medium pot, combine the ⅔ cup sugar, cherries and balsamic vinegar; simmer 10 to 12 minutes.
  7. Remove cheesecakes from the oven, cool and spoon the cherry sauce over top.
