Sour Cherry Cheesecakes Made with Chopped TWIX® Cookie Bars Crust
Ingredients
- 24 each TWIX® Cookie Bars
- 1 1/2 cups cream cheese
- 1 1/2 cups crème fraiche
- 1 1/6 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 each eggs
- 2 cups sour cherries, dried
- 1 tablespoon balsamic vinegar

- Preheat an oven to 250ºF.
- In a blender or Robot Coupe®, blend TWIX® Cookie Bars to a small grain (think panko breadcrumbs). Press into 12 small ramekins that have been lined with butter or nonstick spray.
- In a stand mixer, combine cream cheese, crème fraîche, ½ cup sugar and vanilla; mix on medium-high until creamy.
- On medium speed, mix in eggs until smooth.
- Pour mixture over crusts; place ramekins in a water bath and bake 35 to 45 minutes.
- While the cheesecakes are baking, in a medium pot, combine the ⅔ cup sugar, cherries and balsamic vinegar; simmer 10 to 12 minutes.
- Remove cheesecakes from the oven, cool and spoon the cherry sauce over top.
