Tex-Mex Quinoa And Chicken Bowl
Ingredients
- 3 ½ heaping cup Ben's Original Whole Grain Brown Rice, prepared
- 1/3 heaping cup Red Quinoa, prepared
- 1 cup Cheddar Yellow, shredded
- 1 cup Pepper Jack Cheese, shredded
- 4 Tablespoons Jalapeno, chopped
- 1 pound Grilled Chicken Strips
- ½ cup Pico De Gallo
- 2 Tablespoons Sour Cream
- ¼ cup Tortilla Strips

Makes: 4 servings
Direction
- Combine warm brown rice and red quinoa with cheeses and jalapenos and toss together to melt the cheeses. Divide among 4 serving vessels.
- Place grilled chicken strips on top and garnish with pico de gallo, sour cream and crispy tortilla strips.
