Beignets made with TWIX® Cookie Bars

Makes: 40 beignets

INGREDIENTS

Beignet Dough
  • 1 c warm water
  • 2 t instant dry yeast
  • ⅓ c + 1 T granulated sugar
  • ⅔ c whole milk
  • 1 egg
  • 1 egg yolk
  • 3 T unsalted butter, melted
  • 1 t salt
  • 4 ⅓ c all-purpose flour
To Fill & Finish
  • 1½ c TWIX® Cookies Bars, ⅛” chopped
  • ⅓ c powdered sugar

DIRECTION

  1. Combine warm water, yeast and one tablespoon of sugar. Let sit for 10 minutes.
  2. Mix in remaining sugar, milk, egg, egg yolk and melted butter.
  3. Add the salt and flour to the above. Using a stand mixer with a dough hook attachment on medium speed.
  4. Mix for 3 minutes or until dough is smooth and pulls away from the sides. Add extra flour if needed to achieve the desired result.
  5. Cover the dough and let rise until doubled, about 90 minutes.
  6. Transfer dough to a floured surface and roll out to 1/4" thickness.
  7. Portion into 40 equal strips.
  8. Place 2 t of chopped TWIX® Cookie Bars into center of one half of each strip.
  9. Wet the outside dough edges and fold dough over top of the filled half and gently press sides to seal product.
  10. Deep fat fry filled beignets at 350°F for 30 seconds and then flip to the other side for an additional 20-30 seconds.
  11. Let cool and finish with powdered sugar.
  12. Serve individually.
