Quinoa And Whole Grain Brown Rice Apple Crisp
Ingredients
- 1 heaping cup Ben's Original Whole Grain Brown Rice, prepared
- 1 ½ heaping Tbsp Red Quinoa, prepared
- 2 Red Apples, core removed, peeled and sliced 1/4" thick
- 1/2 cup Sugar
- 2 teaspoon Cinnamon
- 2 Tablespoons Lemon Juice
- 1 1/4 cup Rolled Oats
- 1/4 cup Butter, melted
- 1/4 cup Butter, melted
- 1/4 cup Maple Syrup
- 1/4 cup All Purpose Flour
- 1 cup Vanilla Bean Ice Cream

Makes: 4 servings
Direction
- Preheat oven to 350°F. Spray a baking pan with baking spray and set aside.
- In a mixing bowl, combine apples, sugar, 1 teaspoon cinnamon and lemon juice. Set aside.
- In a separate mixing bowl add brown rice, quinoa, oats, butter, maple syrup and flour. Add remaining cinnamon and combine.
- Add apple mixture to the prepared baking pan and cover with quinoa-and-oat topping. Bake for approximately 35 - 40 minutes. Remove from oven.
- Portion into four even, individual servings and serve immediately with a scoop of vanilla ice cream.
