Ingredients

  • 1 heaping cup Ben's Original Whole Grain Brown Rice, prepared
  • 1 ½ heaping Tbsp Red Quinoa, prepared
  • 2 Red Apples, core removed, peeled and sliced 1/4" thick
  • 1/2 cup Sugar
  • 2 teaspoon Cinnamon
  • 2 Tablespoons Lemon Juice
  • 1 1/4 cup Rolled Oats
  • 1/4 cup Butter, melted
  • 1/4 cup Butter, melted
  • 1/4 cup Maple Syrup
  • 1/4 cup All Purpose Flour
  • 1 cup Vanilla Bean Ice Cream

Quinoa And Whole Grain Brown Rice Apple Crisp

Makes: 4 servings

Direction

  1. Preheat oven to 350°F. Spray a baking pan with baking spray and set aside.
  2. In a mixing bowl, combine apples, sugar, 1 teaspoon cinnamon and lemon juice. Set aside.
  3. In a separate mixing bowl add brown rice, quinoa, oats, butter, maple syrup and flour. Add remaining cinnamon and combine.
  4. Add apple mixture to the prepared baking pan and cover with quinoa-and-oat topping. Bake for approximately 35 - 40 minutes. Remove from oven.
  5. Portion into four even, individual servings and serve immediately with a scoop of vanilla ice cream.
